Luckily enough for me, my friend acquired the nitro I love how obsessive Heston is with his approach to scientific cooking. The Big Fat Duck Cookbook. The first part of this highly engaging book is autobiographical; essentially a how where and when the ringmaster Blumenthal amassed and assembled the individual ingredients of his success.
May blumfnthal, DeAnna Knippling rated it it was amazing. I’m not expecting to cook any of the dishes from the recipes section, nor even sure I want to go and eat at The Fat Duck, but there are definitely lots of ideas and insights to take away.

At the front is the autobiography, beautifully and wittily illustrated by Dave McKean, who has reinvented the man as the fictional hero of his own narrative, all domed forehead, questing chin and razor-sharp glasses.
If anything, in the years I have been both eating and talking to Hesto about his food, my respect for the man has only grown.

N obody goes to Heston Blumenthal’s restaurant because they are feeling a bit peckish though it happens that a visit to the Fat Duck will sate your hunger. As for me, I can only see it as a very good thing indeed. In the back, you will find deadly serious essays on such matters as the effect of heat on meat protein or “ice cream science,” by himself and his entourage of university food scientists along with detailed rundowns on new kitchen tools such as refractometers.
But an awful lot of professional chefs will also buy it, study the science section in detail, examine the recipes and let that influence seep deep into their own cooking. We learn about the history of his restaurant – The Fat Duck and how it became an international success, awarded with three Michelin stars. Thanks for telling us about the problem. It will be a foodie’s dream to open up The Fat Duck Book and discover just what goes on in the head of one of the world’s most famous chefs.
Struggling find the key, the cunningly well-concealed two page index is eventually revealed folded-in within the middle of the book between pages andflanked by a couple of lollies: These recipes are staggeringly long, involve fiendishly expensive pieces of equipment, are extraordinarily detailed and are probably, for the home cook, completely unmanageable, but that’s to miss the point.
Being a vegetarian I probably won’t be cooking out of this book. What a wacky guy! There are blogs where people have attempted to cook their way through The French Laundry Cookbook, itself some feat. Heston discusses the evolution of his cooking at his first restaurant The Thhe Duck, which is a very interesting journey. Perhaps what is most extraordinary about the success of The Fat Duck is that Heston is entirely self-taught, save for three weeks spent in a few professional kitchens.
He spent the next decade learning the basics of French cuisine from books and working as everything from a photocopier salesman to a debt collector to fund annual research trips to France. But in a general sense it was Inspirational. Cookbookk astonishing achievment from one of the most exciting figures in cutting-edge cooking. Each one comes with a stunning photograph or series of cookkbook, an anecdotal background and then the recipe itself, often consisting of several sub-recipes. I had fun following the chef and his train of thought throughout this book.

It all sums up as a remarkable work, if perhaps too lavish and even possibly contrived. Heavy gloss paper accounts for much of that. He is the equivalent of the high-school physics class in which you shoot a flaming potato from one side of the football field to the other PLUS the art class where you take a bunch of naked pictures of people, make them into a collage, and get an A on the project, even if you can’t show it at the school art show, AND the English class in which you conjugate the verb “shit” with the full cooperation of your teacher.
